To prepare the dough you will need:

  • Flour 500 grams
  • Sugar 150 grams
  • Vanilla sugar8 grams
  • Salt 1/2 tsp 
  • Dry Fast-Acting Yeast  7 g 
  • Warm Milk 250 ml
  • Egg 1 nos
  • Butter 50 grams
  • Cocoa Powder 2 tbsp 

Mix flour, sugar, vanilla sugar, and yeast.

Add warm milk, 1 egg, and melted butter to dry the ingredients.

Knead the dough by hand or with a mixer using the hook attachment.

Divide the dough in half, and add cocoa powder and 1-2 tablespoons of milk to one part to even out the consistency of the dough.

The result is two types of dough: regular and chocolate.

Put the usual dough in a bowl greased with butter, cover the bowl with cling film and leave to rise.

Separate a quarter from the chocolate dough. Place the remaining dough in a bowl and cover with cling film to rise.

To the separated part, add 2 more tablespoons of cocoa powder and 2 tablespoons of milk. Leave the dough warm under cling film.

All types of dough should grow in volume by 1.5-2 times.

After the dough has risen, punch it down well.

Divide each piece of chocolate dough into 4 parts, and divide the regular dough into 5 parts.

Roll up pieces of dough and let it rest for 5-10 minutes. This will make the dough easier to roll out.

Roll out all the pieces of dough into pancakes with a diameter of about 20 cm.

Brush the rolled-out dough with a little water.

Assemble a stack of pancakes, alternating between plain, light chocolate, and dark chocolate batter.

Compact the stack of dough, and roll it to get an even layer.

Cut the layer into 8 strips.

Knead each strip with your hands to open the layers, roll out the dough, roll it up, twist it and connect the tails so that you get a ring.

Place the prepared buns on a baking sheet covered with parchment paper at a distance from each other, cover the buns with cling film and leave in a warm place to proof for 30 minutes. During this time, the buns will increase in size by 1.5-2 times.

Lightly brush the buns with water before baking.

Bake the buns in an oven preheated to 180 degrees for 20-25 minutes. Place a baking sheet filled with boiling water on the bottom shelf of the oven. The steam will help the buns rise better.

Grease the finished buns lightly with butter.

Buns are very soft, airy, and beautiful.
