- Eggs 2 Nos
- Vegetable oil 50 ml
- Spoons of powdered sugar 3 art.
- Lemon juice
- Lemon peel
- Baking powder 10 grams
Mix two eggs with vegetable oil, lemon juice, powdered sugar, zest, and vanilla. Whisk.
Add flour (not all) and baking powder. Knead the dough with your hands, gradually adding flour.
Bring it to a soft state. If it sticks to your hands too much, add more flour. The final consistency should be close to shortbread. Cover the dough and let it rest.
Once it’s set, make small balls and roll them in powdered sugar.
Lay out on a baking sheet lined with paper.
Bake at 180 degrees for 20 minutes.
The cake will be very soft and airy.
